Balsamic Herb Salmon Kabobs

Balsamic Herb Salmon Kabobs


2 salmon fillets, cut into 1 inch squares 
1 cup of Balsamic Herb Marinade 
1 small white onion, cut into small pieces.
1 cup of Balsamic Herb Marinade 1 red bell pepper, cut into small pieces.

Instructions:  In a small bowl, marinate the small pieces of salmon in one cup of the Balsamic Herb Marinade (recipe to follow).  Cover and set it stand for one hour.

Add the marinated pieces of salmon, white onion and red bell pepper onto the skewers.  Broil or grill for for 7-10 minutes.   Turn the skewers every 3 1/2 minutes until they are cooked thoroughly.

For the Balsamic Herb Marinade:

Instructions: In a small bowl, mix the following ingredients together.

1 cup of balsamic vinegar
1 clove of garlic, grated
1/2 tsp. of Provence herbs
sea salt and freshly ground pepper to taste
1/2 cup of Olive Oil

Another great idea using the Balsamic Herb Marinade is to use it as a dip on an small platter for a quick and easy appetizer for any occasion.  On a small platter place pieces of fresh cut mozarella cheese, tomato, sweet bell pepper, and toasted multigrain bread.  Add a small bowl of the Balsamic Herb Marinade on the platter and serve!
