Marinated Mushrooms

Marinated Mushrooms


Ingredients:

4 cups of sliced mushrooms
1/4 cup of finely chopped pimientos
1/4 teaspoon of herbs de Provence
1 cup of red wine vinegar
1/4 cup of olive oil 
1/2 clove of garlic, grated
salt and black pepper to taste



Instructions:

Add all the ingredients into a medium mixing bowl and mix well.  Cover the bowl with plastic wrap.Let stand for 1 hour in the refrigerator.  Serve and enjoy!
