Mexican Tomato, Onion and Red Bell Pepper Salad with Lemon Cilantro Vinegarette

Mexican Tomato, Onion and Red Bell Pepper Salad with Lemon Cilantro  
Vinegarette


3 cups of fresh, chopped tomatoes
2 cups of chopped white onion
3 cups of chopped red bell pepper
1 cup of Lemon Cilantro dressing
1/2 cup of crumbled Cotija or Feta cheese


In a large mixing bowl, add all the ingredients together and mix. Serve liberally.



Lemon Cilantro Vinegarette

1/2 cup of Lemon juice
1/2 cup of olive oil
1/2 cup of cilantro
pinch of salt

In a blender, add all the ingredients and blend for 30 seconds.
