Poached Salmon with Lemon Dill Veggie Slaw



Poached Salmon 
with 
Lemon Dill Veggie Slaw


Ingredients:

2 salmon fillets, poached

For the Veggie Slaw:
 
3 cups of fresh, chopped green
1/2 cups of thinly sliced red onion
1 cup of thinly sliced cucumber
1 cup of chopped red bell pepper
1 cup of Lemon Dill Vinegarette


How to Poach the Salmon:

In a large non-stick skillet, add 4 cups of water and boil.  Add the salmon fillets and cook for 15 minutes.  Remove the fillets from the skillet and drain.  Place the fillets on a plate.  


Preparing the Veggie Slaw:

In a large mixing bowl, add the cabbage, onion, red bell pepper, cucumber and the lemon vinegarette together and mix. Serve on the plate, next to the poached salmon.

Preparing the Vinegarette:

Lemon Dill Vinegarette

1/2 cup of Lemon juice
1/2 cup of olive oil
1/4 cup of dill
pinch of salt

In a blender, add all the ingredients and blend for 30 seconds.
