12 rose potatoes, cut into small cubes
1 red bell pepper, chopped
1 cup of white onion, chopped
1/4 cup of olive oil
1/3 teaspoon of herbs de Provence
black pepper to taste
Cook the potatoes in a large non-stick pan over medium-high heat for 7-10 minutes, until they are tender. Stir frequently.
Add the rest of the ingredients and cook for another 5-7 minutes, stirring frequently.
Serve and enjoy!
