Tossed Salmon Salad with Toasted Wheat Pita Chips

Tossed Salmon Salad 
with Toasted Wheat Pita Chips


Ingredients:

2 salmon fillets, poached and flaked
into small pieces
1 cup of diced celery
1/2 cup of chopped white onion
1 cup of chopped roma tomatoes
1/3 cup chopped cilantro
juice of 1 lime
salt and freshly ground pepper to taste
1/2 cup of olive oil


Instructions:

Mix all the ingredients together in a medium sized bowl.  Serve with toasted wheat pita chips.
