Tuscan Roasted Potato Salad

Tuscan Roasted Potato Salad


18-20 small rose potatoes, cut into small 1 inch pieces 1 cup of green onions, chopped
1 cup of chopped Italian parsley

1/2 cup of chopped dried tomatoes

1/2 cup of sliced white onion

1 cup of black olives, chopped

1 cup of Italian dressing 

1/2 cups of olive oil

1/2 cup of parmesan cheese


1. In a medium bowl, add the potatoes and 1/2 cup of olive oil and mix well. Spread the potatoes evenly on a baking sheet.  Roast the potatoes in the broiler for 15 - 20 minutes.  

2. Cool the potatoes on top of the stove.  When the potatoes are cool,  add them  to a medium bowl with the rest of the ingredients and the Italian dressing. 

3. Mix well.   Serve and enjoy.
