Mom's Creamy Potato Salad

Mom's Creamy Potato Salad


Ingredients:

10 large Idaho potatoes, cut into small pieces and boiled until tender and cooled
4 hard boiled eggs, chopped into cubes
1 cup of chopped celery
1/2 cup of chopped green onion
1/2 cup of grated carrot
salt and black pepper to taste
3 cups of mayo



Garnish:

1/4 teaspoon of paprika


Instructions:  

In a large mixing bowl, Add all the ingredients and mix well.  
Garnish the salad with paprika by sprinkling it on top.  Serve and enjoy!

Lentils and Stewed Tomatoes

Lentils and Stewed Tomatoes


Ingredients:

1 20 oz. can of lentils
1 clove of garlic, grated
1 14 oz can of stewed tomatoes
1/4 cup of chopped onion
1/2 cup of grated carrots
1/2 cup of chopped celery
one 8 oz. can of tomato sauce
1 tablespoon of olive oil


Instructions:

In a medium sauce pan, sautee the garlic, onion, carrots, and celery in olive oil over medium heat for 4-5 minutes.  Add he stewed tomatoes, lentils, and tomato sauce.  Cook for another 4-5 minutes. Serve and Enjoy!  

Healthy Tip:  For a quick healthy meal, serve over 1 cup of basmati or brown rice.
