Marinated Mushrooms

Marinated Mushrooms


Ingredients:

12 button mushrooms, sliced
1 cup of Monica's Italian Vinegarette

Instructions:

To a large bowl, add the sliced mushrooms and Monica's Italian vinegarette.  Mix well, cover with plastic wrap and let stand in the refrigerator for 1 hour.  Serve and Enjoy!

Monica's  ITALIAN VINEGARETTE AND MARINADE


INGREDIENTS


  • 1/2 cup. red wine vinegar
  • 1/2 cup of olive oil
  • 1 Tbsp. grated Parmesan cheese
  • 1/4 tsp Herbs de Provence
  • 1 clove of garlic, grated
  • freshly ground black pepper, to taste
  • salt to taste

DIRECTION

IN SMALL BOWL, COMBINE ALL INGREDIENTS AND MIX WELL.   USE GENEROUSLY ON A SALAD OR AS A MARINADE.

Monica's  Italian  Vinegarette  and  Marinade

INGREDIENTS


  • 1/2 cup. red wine vinegar
  • 1/2 cup of olive oil
  • 1 Tbsp. grated Parmesan cheese
  • 1/4 tsp Herbs de Provence
  • 1 clove of garlic, grated
  • freshly ground black pepper, to taste
  • salt to taste

DIRECTION

In small bowl, combine all ingredients and mix well.   Use generously on a salad or as a marinade.

Roasted Tomatoes Antipasto

Roasted Tomatoes Antipasto


Ingredients:

5 Roma Tomatoes, cut into small wedges
1/2 tsp of herbs de Provence
crushed red pepper to taste
salt to taste
1/3 cup of olive oil


Instructions:

Arrange the wedges of tomatoes on a baking sheet.  Sprinkle the herbs de Provence and the salt onto the tomato wedges.  Broil the tomatoes for 5-7 minutes.  Turn the tomatoes over on the baking sheet after 3 1/2 minutes.   

Take the tomatoes out of the oven after 7 minutes and let them cool. After 10 minutes, place the tomato wedges in a bowl, sprinkle with red pepper and drizzle with the olive oil.  Serve and enjoy!
