Grilled Eggplant and Provolone Sandwiches

Grilled Eggplant and Provolone Sandwiches



Ingredients:

1 eggplant, sliced and grilled
4 slices of provolone cheese
2 twelve inch French bread
1/2 cup of Italian dressing


Instructions:

Slice the two French breads lengthwise, down the center
place half the eggplant slices on each of French bread. Place 2 slices of Provolone cheese on each slice of bread.  Place in the broiler and cook until the cheese is melted.

Take the sandwiches out of the broiler and place on top of the stove to cool.  Move the sandwiches onto a plate.  Drizzle the bread with Italian dressing.  Serve and enjoy!
