Grilled Eggplant

Grilled Eggplant


1 large eggplant, sliced into thin slices
1/2 cup of olive oil


On a non-stick indoor grilling pan, grill the eggplant slices on medium heat for 4-5 minutes.  Flip the slices over and grill for another 3-4 minutes.  

Take them off the grill and place them on a decorative plate. drizzle the olive oil on top of the grilled eggplant.  Serve and enjoy!
