Southwest Potato Salad

Southwest Potato Salad


6 large Russet potatoes, cut into small cubes
1 cup of chopped celery
1/2 cup of chopped
1 cup of chopped Pasilla chili pepper or green bell pepper
2 cups of Southwest dressing

In a medium stockpot, boil the potatoes in water for 20 minutes.  Drain the potatoes in a colander.  Rinse the potatoes in cool water for 1-2 minutes.  Let the potatoes drain until all the excess water has drained out.

Add the potatoes to a medium mixing bowl along with the Southwest dressing, the celery. the onion, and the Pasilla peppers.   Mix all the ingredient s well. Cover with plastic wrap amd chill in the refrigerator for about 30 minutes.  Sere and enjoy!

Southwest Dressing:

2 cups of mayonnaise 
1/2 cup of lime juice
1 tbsp. of red chili powder
1/3 tsp. of cayenne pepper
1/3 tsp of cumin
salt to taste


In a small mixing bowl, add all the ingredients for the Southwest dressing and mix well with a whisk.
