Chicken Marsala

Chicken Marsala




Ingredients:


  • 4 boneless skinless chicken breasts
  • salt
  • dried oregano
  • 4 tablespoons butter 
  • 1 cup marsala wine
  • 1/2 cup flour
  • pepper
  • 4 tablespoons oil
  • 2 cups fresh mushrooms, sliced













Instructions:

  • POUND chicken breasts between sheets of plastic wrap until about 1/4" thickness.
  • COMBINE flour, salt, pepper and oregano in a mixing bowl.
  • Dredge chicken pieces in the flour, shaking off any excess.
  • HEAT oil and butter in a skillet over medium heat.
  • Grilled Eggplant and Provolone Sandwiches

    Grilled Eggplant and Provolone Sandwiches



    Ingredients:

    1 eggplant, sliced and grilled
    4 slices of provolone cheese
    2 twelve inch French bread
    1/2 cup of Italian dressing


    Instructions:

    Slice the two French breads lengthwise, down the center
    place half the eggplant slices on each of French bread. Place 2 slices of Provolone cheese on each slice of bread.  Place in the broiler and cook until the cheese is melted.

    Take the sandwiches out of the broiler and place on top of the stove to cool.  Move the sandwiches onto a plate.  Drizzle the bread with Italian dressing.  Serve and enjoy!


    Grilled Eggplant

    Grilled Eggplant




    Ingredients:

    1 large eggplant, sliced into thin slices
    1/2 cup of olive oil


    Instructions:

    On a non-stick indoor grilling pan, grill the eggplant slices on medium heat for 4-5 minutes.  Flip the slices over and grill for another 3-4 minutes.  

    Take them off the grill and place them on a decorative plate. drizzle the olive oil on top of the grilled eggplant.  Serve and enjoy!

    Olive Garden's Salad Dressing



    Instructions:

    Combine all ingredients in a blender or food processor; puree until smooth.


    Baby Spinach Salad with Lemon Caper Dressing

    Baby Spinach Salad with Lemon Caper Dressing




    Ingredients

    6 cups of baby spinach
    1 cup of diced tomatoes
    1/2 cup of lemon caper dressing
    grated Parmesan cheese, for garnish



    Instructions

    In a large mixing bowl, Add the spinach, tomatoes, and the dressing a mix well.  Add the Parmesan cheese on top of the salad. Serve and enjoy!







    Lemon Caper Dressing



    Ingredients:

    The juice of 1 lemon
    1/2 teaspoon of capers, finely chopped
    1/4 teaspoon of Italian Seasoning
    1/2 cup of olive oil
    1/4 cup of grated parmesan cheese
    black pepper to taste


    Instructions:

    In a small mixing bowl, add all the ingredients together and mix well.




    Homemade Alfredo Sauce

    Homemade Alfredo Sauce





    Ingredients:

    2 cups of half and half
    1 tbs of butter
    1 cup of Parmesan Cheese
    black pepper to taste 


    Instructions:

    In a medium saucepan, add the half and half, the butter and the black pepper simmer over a medium heat for about 5 minutes.  Add the Parmesan cheese and mix well.  Cook for another 3-5 minutes and stir the mixture to melt the cheese evenly.  

    Artemis' Pomodoro Sauce

    Ingredients:

    1 28 oz.  can of whole tomatoes, crushed
    10 large basil leaves, chopped
    1 cup of chopped, white onion
    1/4 cup of olive oil


    Instructions:

    In a large saucepan, add the olive oil, onions, and the basil, and sautee over medium heat for 3 minutes. Add the tomatoes and simmer for another 3-5 minutes.  Add your favorite cooked pasta and mix well.  Serve and enjoy!



    Cleo's Puttanesca Sauce

    Ingredients:

    1 28 oz.  can of whole tomatoes, crushed
    10 large basil leaves, chopped
    1 cup of chopped, white onion
    1 cup of white wine
    1/4 cup of olive oil
    1 cup of chopped black olives
    1 teaspoon of capers, finely chopped
    red peppers to taste
    1/2 cup of Parmesan cheese


    Instructions:



    In a large saucepan, add the olive oil, onions, and the basil, red pepper and sautee over medium heat for 3 minutes. Add the white wine, tomatoes, capers, black olives and simmer for another 3-5 minutes. Add the Parmesan cheess and cook util the cheese has melted.Add your favorite cooked pasta and mix well.  Serve and enjoy!

    Ingredients:

    The juice of 1 lemon
    1/2 teaspoon of capers, finely chopped
    1/4 teaspoon of Italian Seasoning
    1/2 cup of olive oil
    1/4 cup of grated parmesan cheese
    black pepper to taste


    Instructions:

    In a small mixing bowl, add all the ingredients together and mix well.



    Creamy Lemon Basil Sauce

     Creamy Lemon Basil Sauce





    Ingredients:
    1 cup of Alfredo sauce
    the juice of 1 lemon
                       1 cup of white wine
                 1 tsp. of capers
                 20 basil leaves
                 2 cloves of garlic, grated
                        1 cup of grated Parmesan cheese
    1 cup of water

                       
                 Instructions:

    In a blender, add the Alfredo sauce, the juice of one lemon, white wine, capers, basil, and garlic,  Blend together for 30-45 seconds until the sauce is well blended. Transfer the sauce to a large saucepan.  Add the Parmesan cheese and water to the saucepan.  Cook over medium heat for 9-10 minutes.  Add the white wine and the capers and sautee for another 1-2 minutes. Add the Alfredo sauce, the Parmesan cheese and stir well.   Serve over your favorite pasta.  Enjoy!
