Chunky Tomato-Basil Sauce

   Chunky Tomato-Basil Sauce






Ingredients:

1  28 oz can of crushed tomatoes
2 cups of diced, cooked tomatoes
1/2 teaspoon of finely chopped capers
1/4 teaspoon of crushed red pepper
3 cloves of garlic, grated
1/2 cup of chopped white onion
20 sweet basil leaves, finely chopped
8 drops of Tabasco sauce
2 cups of water
one 16 oz jar of Alfredo Sauce 



Instructions:

In medium sauce pan, add the white onions and olive oil.  Sautee the onions until they are translucent, about 4-5 minutes.  Add the basil. the garlic, the red pepper, and the diced tomatoes to the pan.  Cook for another 4-5 minutes.  Add the rest of the ingredients and cook for 7-10 minutes.  

Serve this sauce over your choice of pasta.  Enjoy!

 Add and sautee the garlic, onions and red pepper for 4-5 minutes over medium heat.  Add the crushed tomatoes, the basil, the oregano, the Alfredo sauce, 2 cups of water and the Tobasco sauce,  simmer for 5-7 minutes.  Serve your meat sauce sauce on pasta, pizza, or use for dipping.

Phillipe's Caesar Dressing

My 9 year old son Phillip created this recipe.  It's packed with flavor and it's totally awesome. Phillip, You're the best!

Ingredients:

1 cup of 1 lemon juice
1 tsp. of spicy whole grain mustard
1/2 teaspoon of capers, finely chopped
1 clove of garlic, grated
1 cup of olive oil
1/4 cup of grated Parmesan cheese
black pepper to taste
salt to taste


Instructions:

In a small mixing bowl, add all the ingredients together and mix well with a wire whisk.  Use as a salad dressing or a marinade. 

Black Olive and Sun-dried Tomato Tapenade

Black Olive, Sun-dried Tomato, and Onion Tapenade


Ingredients:


1 cup of finely chopped black olive
1/2 cup of finely chopped sun-dried tomato
1/2 cup of finely chopped white onion 
1 tbsp. of capers, finely chopped
1 clove of grated garlic
1/8 tsp of crushed red pepper
1/4 cup of grated Parmesan cheese
 1 1/2 cup of olive oil


Instructions:

Add all the ingredients into a medium sized mixing bowl. Mix all the ingredients together.  Sere with fresh French or Sourdough bread.  Enjoy!



Traditional Basil Pesto

Ingredients You Will Need:

                    20 basil leaves
1 cup of chopped Italian parsley
2 cloves of grated of garlic
1 cup of olive oil
1/2 cup of freshly grated Parmesan Cheese
1/2 cup of pine nuts or walnuts
 pepper to taste


Instructions:

In a large blender, add all the ingredients together and mix well.  Place the pesto into a small serving bowl and add another 1/2 cup of olive oil.
Mix together and serve!

Creamy Lemon Basil Sauce

Creamy Lemon Basil Sauce



Ingredients:

16 oz of Alfredo sauce
1 tablespoon of lemon juice
15 basil leaves
2 cloves of garlic, grated

freshly grated pepper to taste

Instructions:

In a blender, mix all the ingredients together to a smooth consistency.  Transfer this mixture to a medium sauce pot.  Cook over medium heat until the mixture simmers, about 10-15 minutes.  Serve over your favorite fish or pasta.  Enjoy!
