Chicken Cordon Bleu

Chicken Cordon Bleu



Ingredients:


2 chicken fillets
1/2 cup of bread crumbs 
2 slices of honey cured ham 
1 slice of Swiss cheese


Instructions:


In a small bowl, add the bread crumbs.  Place each of the chicken fillets in the breadcrumbs and coat evenly.  

Place the chicken fillets into a small baking dish and bake in the oven for 30 - 35 minutes at 350 degrees Fahrenheit.  Flip each of the chicken breasts once after they have cooked for 15 minutes.  

Add 1 slice of ham and 1/2 slice of Swiss cheese to the top of each chicken fillet.  Cook for 5 - 7 more minutes, or until the cheese is melted.  Serve and enjoy!


Kale, Cabbage and Broccoli Slaw

Kale, Cabbage and Broccoli Slaw


If you need an ultra-healthy but tasty side,  this slaw is for you!  It's loaded with kale and green cabbage, and broccoli:  3 cruciferous vegetables with anti-cancer properties.  The olive oil helps lower the levels of triglycerides in the body and also helps to maintain healthy cells, veins and arteries.  


Ingredients:

2 cups of chopped kale
2 cups of chopped green cabbage
2 cups of finely chopped broccoli
1 cup of shredded carrots 
1/2 cup of lime juice
1 cup of olive oil
1/8 teaspoon of Lawry's salt


Instructions:


In a large mixing bowl,  add all the ingredients.  Mix well.  Serve and enjoy!
