Pesto Amoroso


                   Pesto Amoroso

 I love experimenting with new flavor combinations.  Green chard is added to the pesto and gives it more of an earthy flavor.  The addition of onion, sun-dried tomatoes, and red pepper give makes it tangy and also gives it a flavor punch. 


Ingredients:

                    10 basil leaves
2 cups of chopped green chard
1 clove of grated of garlic
                              1/2 cup of chopped, white onion
                
                    1 tsp. of capers 
                   
                    1 tbsp. sun dried tomatoes in oil


1 1/2 cup of olive oil
1/2 cup of freshly grated Parmesan cheese
red pepper flakes to taste


Instructions:

In a large blender, add all the ingredients together and mix well.  Place the pesto into a small serving bowl or use it with your favorite pasta. 
Mix together and serve!

  Chicken Broccoli Alfredo Fettucine


Ingredients:

 

1 lb of cooked Fettucine 

2 cups of boiled or rotisserie chicken

6 cups of broccoli

1 clove of garlic, grated

2 Alfredo Sauce



Instructions:

In a large, non-stick pan, Alfredo sauce, the garlic, and the chick.  Cook over medium heat, until it simmers, about 7-8 minutes.  Add the Fettucine pasta and broccoli to the pan and cook another 2-3 minutes.  

Transfer the pasta to a large serving bowl.  Serve and enjoy!
