Sauteed Kale, Swiss Chard and Portabello Mushroom


I was looking for a tasty recipe that combined greens with a lot of nutrients, mainly vitamins and minerals.  What I had in mind was an Italian-inspired recipe such as kale and Swiss chard.


Ingredients:

3 cups of chopped Kale
3 cups of Swiss chard
1/2 cup of chopped, white onion
1 clove of grated garlic
1/2 tablespoon of capers
1/4 of tsp. of Italian seasoning
crushed red pepper, to taste
1/2 cup of olive oil



Instructions: 

Heat a medium sautee pan with olive oil.  Sautee the onions, garlic and red pepper in this olive oil until the onions are translucent.  Add the rest of the ingredients and cook for 5-7 minutes or until the greens are tender. 

Baby Spinach, Baby Chard and Artichoke Heart Salad

Baby Spinach, Baby Swiss Chard and Artichoke Heart Salad


This is a recipe I developed especially for spinach and Swiss chard that is grown in my garden.  I grow these two greens, and others, two different ways.  One set of greens is fully grown and the other is harvested while the leaves are young, hence the name "baby."  

Ingredients for the Salad:

3 cups of baby spinach
3 cups of baby Swiss chard
1 cup of chopped, fresh tomatoes
1/2 cup of chopped, marinated artichoke hearts
1/4 cup of freshly, grated Parmesan or Romano cheese


Vinegarette Dressing:  

In a small bowl, mix the following ingredients together.

1/4 cup of olive oil
1/4 cup of red wine vinegar
1/8 teaspoon of dried oregano
sea salt to taste
freshly ground pepper, to taste


Instructions:

In a medium mixing bowl, add the baby spinach, the baby Swiss chard, tomatoes, artichoke hearts, cheese and dressing.  Mix well and enjoy.

Green Olive and Tomato Tapenade


Ingredients:


1 cup of finely chopped black olive
1/2 cup of finely chopped canned tomato
1 clove of grated garlic
1/4 cup of grated Parmesan cheese 
1 1/2 cup of olive oil
1/8 tsp of dried oregano 
1/2 cup of red wine
sea salt to taste 
freshly ground black pepper, to taste


Instructions:

Add all the ingredients into a medium sized mixing bowl. Mix all the ingredients together.  Serve with fresh French or Sourdough bread.  Enjoy!
