Pan-Roasted Pumpkin

 Pan-Roasted Pumpkin


Nothing says autumn like pumpkin.  Pumpkin soup, pumpkin bread, and pumpkin pie.  Here's a great anytime side dish made from pumpkin.


Ingredients:

6 cups of pumpkin,  cut into small 1 inch pieces
1 clove of garlic, grate
1/3 teaspoon of paprika
1/3 teaspoon of cinnamon
1/2 cup of chopped white onion
2 tablespoons of olive oil


Instructions:

In a large non-stick pan, add the olive oil and pumpkin.  Cook on high heat for 5 minutes.  Add the rest of the ingredients to the pan and cook on medium heat for another 10-15 minutes until the pumpkin is fork tender. Serve and enjoy!
