Fried Chicken Breast Po' Boys

Fried Chicken Breast Po'Boys

When I'm craving a fried chicken and a taste of New Orleans, I make a Po' Boy with fried chicken.  It's a simple sandwich, without coleslaw, but with big flavor!

Ingredients:

-8 fried chicken breast slices
-4 French Bread Rolls (6 inches in length)
-2 cups of Mayonnaise
-1 large tomato, thinly sliced
-2 cups of shredded lettuce

Instructions:

1. Cut each of the French rolls in half, lengthwise.

2. To one side of the French roll, add 1/2 cup of mayonnaise, 1/2 cup of shredded lettuce, and 2 slices of tomato.  (Do this for the rest of the French rolls.)

3. To the other side of the French bread roll, add 2 slices of the fried chicken breast.  (Do this for the rest of the French rolls.)

4.  Put the 2 sides of the French roll together.  Cut the sandwich in half and serve.  (Do this to the rest of the French rolls.)
