Kale:  The Super Food



Kale is described as a "hearty green, leafy vegetable that grows in individual stalks and is sold in markets in bunches.  Kale is widely known as a superfood because it is nutrient dense and packs a lot of vitamins and minerals such as Vitamins A, C, K, B6 and Calcium.  Kale also contains important cancer fighting compounds such as sulforaphane, isothiocyanate, and indoles.  You can eat kale chopped up in salads along with other greens or blended in a smoothie.  You can also enjoy it in a pesto. The pesto can be mixed into pasta or eaten with bread or vegetables.  Try the recipe below as a  tasty summertime treat!

Kale and Sun-dried Tomato Pesto Pasta

For the Pesto:

1 cup of chopped green kale
5-6  pieces of sun-dried tomatoes in Olive Oil
1 cup of Olive Oil
1 clove of garlic
1/4 cup of grated Parmesan Cheese

Blend all the ingredients together, in a blender for 15-30 seconds.
Mix about 1 tablespoon of the pesto into 2 cups of cooked pasta such as rigatoni.
