Grilled Peach and Mint Relish

Grilled Peach and Mint Relish 

 This grilled peach and mint relish is heaven! It is light, tasty, and great with almost anything!   


Ingredients:
2 large peaches, cut into wedges, grilled (4-5 minutes) and diced
1/2 cup of diced sweet red bell pepper
1/2 cup of chopped onions
1/4 cup of chopped mint
1/2 cup of lime juice
red pepper flakes to taste
salt to taste
                    

Instructions:

In a medium mixing bowl, add all the ingredients together and stir well.  Place into a small bowl and enjoy in your favorite tacos!

Pineapple Relish

Pineapple Relish 

 This pineapple relish is a refreshing, tropical treat, especially during the summer! Use in tacos or over grilled fish or chicken.   

Ingredients:
2 cups of diced pineapple
1/2 cup of chopped onions
1/2 cup of chopped sweet bell pepper
red pepper flakes to taste
salt to taste
                    

Instructions:

In a medium mixing bowl, add all the ingredients together and stir well.  Place into a small bowl and enjoy in your favorite tacos!

Chunky Mango Salsa

Chunky Mango Salsa

 This mango salsa is chunky, tangy, and colorful. Use in tacos or over grilled fish or chicken.   

Ingredients:
2 large mangoes, diced
1/2 cup of diced sweet red bell pepper
1/2 cup of chopped onions
1/2 cup of chopped cilantro
1/2 cup of lime juice
red pepper flakes to taste
salt to taste
                    

Instructions:

In a medium mixing bowl, add all the ingredients together and stir well.  Place into a small bowl and enjoy in your favorite tacos!

Homemade Stewed Tomatoes

 

Homemade Stewed Tomatoes 

  This is a great do-it-yourself recipe for tomatoes straight from your garden!   

Ingredients:
12 large tomatoes, cut into wedges
1/2 cup of diced green pepper
1 cup of chopped onions
1 teaspoon of Italian seasoning
1 clove of garlic, grated
 1/2 teaspoon of white sugar
1 cup of water
                    

Instructions:

In a medium sauce pan, add all the ingredients together and mix well.  Cook over medium heat for 12 minutes. Place the mixture in a plastic container and store in your refrigerator for use with another great recipe.

Arugula and Walnut Pesto

     Arugula and Walnut Pesto 

  Wake up you taste buds with this bold-tasting pesto.  Peppery arugula replaces the more traditional basil for a punchy flavor.   


Ingredients:

                    1 cup of chopped parsley

                    1/2  cup of chopped arugula

                    1/2  cup of walnuts

1 clove of grated of garlic
                           
                    1 1/2 cup of olive oil

1/2 cup of freshly grated Parmesan cheese


Instructions:

In a large blender, add all the ingredients together and mix well.  Place the pesto into a small serving bowl or use it with your favorite pasta. 
Mix together and serve!
