Swiss Chard Piccata

                  Swiss Chard Piccata

  This recipe is a veggie version of chicken piccata.  It is every bit as flavorful as the original Italian recipe!


Ingredients:

4 cups of chopped Swiss Chard 
1  tsp of capers 
1 cup of chopped onions
1 clove of garlic, grated
1/2 tblspn of olive oil 
1 cup of white wine
1/2 cup of lemon juice
red pepper flakes, to taste
1/2 cup of freshly grated Parmesan cheese
                    

Instructions:

In a medium sauce pan, add all the ingredients together and mix well.  Cook over medium heat for 7 - 8 minutes. Place into a medium serving dish.  Garnish the grated Parmesan on top and serve!
