Flaked Poached Salmon
with Lemon Dill Marinade
1 salmon fillet, poached1 cup of Creamy Basil Pesto Sauce
1 cup of cooked angel hair pasta
For the Lemon Dill Marinade:
1/2 cup of olive oil
1/4 cup of lemon juice
1 tsp. of finely chopped dill
salt to taste
In a small bowl, add all the ingredients and mix well.
In a large non-stick skillet, add 4 cups of water and boil. Add the salmon fillets and cook for 15 minutes. Remove the fillets from the skillet and drain. Place the fillets in a serving bowl to cool for 10 to 15 minutes. With a fork, flake the salmon.
Add the marinade into the bowl with the salmon. Mix well. Place the salmon into a
serving dish and enjoy.
