Roasted Eggplant Chips

Roasted Eggplant Chips


 Roasted eggplant chips are healthy to eat as a snack or to eat as a side for soups and sandwiches.  Try this recipe with a marinara dip or a veggie dip for added flavor.


Ingredients:

1 large Japanese eggplant, sliced thin
olive oil

Instructions:

1.  Coat the bottom of a baking pan with a thin layer of olive oil

2.  Lay out all the eggplant slices evenly on the baking sheet

3.  Broil the eggplant for 8-10 minutes
