Salsa Frita (Fried Salsa)

Salsa Frita  (Fried Salsa)

This fried or cooked mild salsa is used typically on top of carne asada, chicken and fish.  


1 kg (2 lb) ripe tomatoes, roasted and peeled
3 tbsp extra virgin olive oil
2 cloves of garlic, grated
1/3 cup of cilantro, chopped
1 medium onion 
1/2 tsp sugar


  • Roast tomatoes on a baking pan, in a broiler.  Broil tomatoes for 5-6 minutes on each side.
  • Allow the tomatoes to cool for 5-10 minutes.  Peel the tomatoes and remove the skins.
  • To a blender, add the tomatoes, garlic, sugar, and salt.  Pulse the tomatoes until it becomes the consistency of crushed tomatoes.  
  • In a saucepan (preferably high, as tomato sauce splash when boiling), heat the olive oil over medium heat.
  • Add the onion, and cook until it is translucent and lightly golden brown, about 8‑10 minutes.
  • Cook salsa for 8 - 10 minutes.
  • Serve and Enjoy!
