Hawaiian BBQ Sauce

Hawaiian BBQ Sauce


Ingredients:

1 cup of pineapple juice
1/2 cup of crushed pineapple
2 cups of BBQ sauce

Instructions:

In a small saucepan, add all the ingredients.

Heat the mixture on medium heat for 8-10 minutes.  Stir periodically.


Monica's Pineapple Coleslaw

Monica's Pineapple Coleslaw



Ingredients:

6 cups of chopped green cabbage
1cup of red cabbage 
1 cup of grated carrot


Dressing for the Coleslaw

To a mixing bowl, add:

3 cups of mayo
1/3 cup of lime juice
1 cup of crushed pineapple


Instructions:

In a large mixing bowl, combine the cabbage, carrots, and the dressing together and mix well.  Serve and Enjoy!



Mom's Old Fashioned Coleslaw

Mom's Old Fashioned Coleslaw



Ingredients:

6 cups of chopped green cabbage
1cup of red cabbage
1 cup of grated carrot


Dressing for the Coleslaw

To a mixing bowl, add:

3 cups of mayo
1/2 cup of red wine vinegar 
1 teaspoon of sugar 


Instructions:

In a large mixing bowl, combine the cabbage, carrots, and the dressing together and mix well.  Serve and Enjoy!


Roasted Eggplant Chips

Roasted Eggplant Chips


 Roasted eggplant chips are healthy to eat as a snack or to eat as a side for soups and sandwiches.  Try this recipe with a marinara dip or a veggie dip for added flavor.


Ingredients:

1 large Japanese eggplant, sliced thin
olive oil

Instructions:

1.  Coat the bottom of a baking pan with a thin layer of olive oil

2.  Lay out all the eggplant slices evenly on the baking sheet

3.  Broil the eggplant for 8-10 minutes
